Bay laurel (Laurus nobilis) is an evergreen shrub or tree, whose leaves are known as bay leaves. The dried leaves have a greenish-brown color, a strong aromatic scent, and a slightly bitter, spicy taste. They are used whole, most commonly to flavor soups, sauces, marinades, goulash, and pickled vegetables. Bay leaves are a staple spice of European cuisine and are also popular in the preparation of game and fish.
