Ingredients
- chicken wings 1 kg
- Chilli sauce 4 to 6 tbsp
- Soy sauces 2 tbsp
- Vinegars 1 tbsp
- Sugar and salt 1 to 2 tsp sugar and a pinch of salt
- Oils 1 tbsp
- garlic 2 cloves
- ginger about 2 cm
- honey 1 tbsp
- starch 1 tbsp optional for extra stickiness
- sesame optional for topping
Method
- Preheat the oven to 220 °C. Pat wings dry, season lightly with salt, and place on a tray, ideally on a rack.
- Bake 35 to 45 minutes, turning halfway, until the skin is crisp.
- In a small pot, combine chilli sauce, soy sauce, vinegar, honey, grated garlic, and ginger. Warm briefly to bring it together.
- For a stickier glaze, dissolve starch in a tablespoon of water and whisk into the sauce. Simmer until it thickens.
- Toss baked wings with the glaze until coated.
- Serve immediately, topped with sesame if you like.
