Cassia (Cinnamomum cassia) is an evergreen tropical tree whose aromatic bark is used as a spice, rolled into characteristic quills. The bark has a reddish-brown color with a pungent sweet aroma and taste. Cinnamon is ideal for sweet and fruit dishes, baked goods, and confectionery, as well as for tomato pastes or chutneys, adding a distinctive spiced depth.
