Light, bright, and very Vietnamese. Herbs and dipping sauce do most of the heavy lifting, while rice paper keeps everything clean and fresh.
Ingredients
- rice paper 10 to 12 sheets
- rice noodles 100 g
- shrimp 200 g cooked or briefly poached
- lettuce a few leaves
- carrot 1 cut into thin matchsticks
- cucumber half, sliced into thin strips
- coriander a handful
- Thai basil optional
Nước chấm dipping sauce
- fish sauce 3 tbsp
- sugar 1 to 2 tbsp
- lime juice of 1
- garlic 1 clove
- chilli to taste
- water 3 to 5 tbsp to soften the bite
Method
- Cook the rice noodles as directed, rinse under cold water, and drain.
- Poach or briefly blanch the shrimp, then cool.
- Set up a wide bowl with lukewarm water and a cutting board.
- Dip a sheet for 2 to 5 seconds, lay it on the board, and let it soften as it rests.
- Add lettuce, noodles, vegetables, herbs, and shrimp.
- Roll tightly. Fold the bottom up over the filling, tuck in the sides, then roll to finish.
- For the sauce, dissolve sugar in water, then add fish sauce, lime, garlic, and chilli. Adjust to your taste.
