🍽️ Recipe: One-pot chicken biryani made simple
Authentically fragrant but still realistic for home cooking. Basmati is the star: fluffy rice, warm spices and juicy chicken.
Ingredients
- basmati rice 300 g
- chicken thighs or breast 500 g
- onion 2
- garlic 3 cloves
- ginger 20 g
- oil 2–3 tbsp
- spices 2 tsp (for example garam masala or a mix of cumin, coriander, turmeric)
- spices 2–3 whole spices (for example bay leaf, cardamom, cloves)
- tomatoes 2 or 200 g chopped
- plain yogurt 150 g
- broths 600 ml (or water)
- sugar and salt to taste
- coriander a handful to finish (optional)
Method
- Rinse the rice. If possible, soak for 15–20 minutes, then drain.
- Heat oil in a pot, add onions and cook until golden.
- Add garlic and ginger and fry briefly.
- Add chicken, season with salt and brown on all sides.
- Add ground and whole spices and stir until fragrant.
- Add tomatoes and cook 3–5 minutes until thicker, then stir in yogurt and simmer briefly.
- Add basmati rice, pour in broth, stir once only, then reduce heat.
- Cover and cook for 12–15 minutes. Turn off heat and rest for 10 minutes covered.
- Fluff with a fork and finish with coriander if you like.
