Ube Macapuno is a purple jam with coconut native to the Philippines. It's basically a bright purple sweet potato with a slightly nutty, vanilla flavor. It is popularly used in Filipino cuisine in desserts, often cooked and then mashed with condensed milk. Ube is often confused with taro, another similar root vegetable, but the two are different. Taro is often used in savoury dishes, while Ube, although it can be cooked with savoury spices, is more commonly used in sweets.
