Doenjang paste is a traditional Korean fermented soybean paste. It is made by long-term fermentation, which gives it a deep, salty and umami taste. It is the base of many Korean soups, sauces and stews. It is used in a similar way to Japanese miso, but has a stronger, more raw flavour profile.
