Preparation: Singapore Chicken Curry Serves 4
. 1 packet Singapore Chicken Curry Spice Paste
. 2 tbsp vegetable oil
. 350 g (3/4 lb chopped chicken pieces
. 2 potatoes, cubed
. 2 cups (440 ml) coconut milk or water
Step 1 Heat oil in saucepan on medium-low heat. Add Spice Paste and stir-fry for 1/2 minutes.
Step 2 Add chicken and potatoes. Stir-fry for 3 minutes. Add cococnut milk and bring to boil.
Step 3 Reduce heat, simmer uncovered for 20 minutes or until cooked. Serve hot with rice or bread.
