Mungo beans are olive green beans that resemble peas in taste. Only whole unpeeled mung beans are suitable for germination. They are a source of calcium, magnesium, iron, folic acid, protein, potassium and fiber. They are consumed cooked or sprouted. Mung beans are often confused with soy. Sprouts or sprouts used in Asian cuisine as soy sprouts are usually sprouted mung beans.
This type is not suitable for germination, it is necessary to cook them for at least 5 minutes.
Before preparation, it is necessary to leave them soaked in water for several hours, optimally overnight. Before cooking, it is recommended to pour water and boil the beans in fresh water to remove bloating substances. They are salted only after cooking, as cooking in salted water would harden them.
