Ube is a purple jam originating in the Philippines. It is basically a bright purple sweet potato with a slightly nutty, vanilla flavor. In Filipino cuisine, it is popularly used in desserts, often cooked and then squeezed with condensed milk. Ube is often confused with Taro, another similar root vegetable, but both are different. Taro is often used in savory dishes, while Ube, although cooked with salty spices, is more commonly used in sweets.
