This mature miso is characterised by its full aroma and delicious depth of flavour. It is also rich in umami. It is ideal for soups, sauces, marinades and noodles. Also excellent as an ingredient in soups, sauces, marinades and ramen. This red miso is fermented for a very long time and therefore has a particularly intense aroma. This variety is particularly popular in the Kanto area around Tokyo and goes very well with aromatic noodle soups!
